The peanut is really a legume, like a pea. India is by far the largest producer of peanuts in the world, followed by mainland China. India and China produce over 50% of the world's peanuts. Sesame, a herb cultivated for its seeds since ancient times, found chiefly in the Old World tropics. Sesame seeds, or bennes, are black or white and yield an oil that resists turning rancid. The oil is used extensively in India for cooking, soap manufacture, food, and medicine, and as an adulterant in olive oil. The seeds are used in baking and confectionery.
Ginger, a multifaceted herb, is cultivated for its root, which is candied or dried for medicines and spice. It is commonly used in aromatic oils. Ginger is crucial in the battle against cardiovascular disease. The volatile oils of the versatile ginger plant are responsible for active medicinal properties as well as for its pungent odor and taste, commonly found in Asian or Indian cooking.
